Sometimes households get their favourite meals for different reasons. As I have mentioned before, often my family likes the meals I make as I tailor them to each person's taste. This is certainly true of Laksa.
The coconut curry noodle soup that I serve, I make using rice noodles, carrot, baby bok choy, bean sprouts, baby corn, fried tofu, chicken, coconut cream, sesame oil, chicken stock and Laksa paste. It is then topped with fried onion and coriander. If we have people over with any food intolerances, it is a great meal to serve as the only thing I have found in it that may be a problem is the laksa paste.
Usually I use Jimmy's sate paste for flavouring, however I have found that it has gluten in it, therefore I use a different base when friends with gluten intolerance come to visit.
Tonight when Steve came for dinner, I stopped at the supermarket to source a different base as he has an intolerance to soy which is to be investigated, and Jimmy's contains soy products. I grabbed a different paste at the supermarket than the one I used most recently and was not overly impressed-maybe because Jimmy's is SO good! Steve liked it though and did not react to the food, so it was a win for him!
